The dough for this dessert is very versatile. You can freeze it for months and simply make anything you want out of it, even buns for hamburgers or for a creamy tuna salad. Just make sure you leave it out to thaw before you make use of it.
Also, this recipe can either be eaten as a dessert by adding sugar syrup to it as soon as it comes out of the oven. Or have it as a snack with a nice cup of tea i.e. as is, hot out of the oven.
For the sugar syrup (you want it to be thick and not watery, or else your dessert will become soggy):
In a sauce pan place 1 cup and a half of sugar and 2 cups of water. Let them boil under medium heat until reduced to a cup and a half. Turn it off and add 3 drops of fresh lemon (this further thickens the mixture and adds a little flavor)
I usually use a quater of this dough for this dessert and freeze the rest for later use. You can reduce the amount respectively:
1) 1 cup sugar
2) 1/2 cup warm water
3) 1 tblsp yeast
4) 1/2 tsp salt
5) 3/4 cup of butter
6) 1 cup cold water
7) 1 egg
9) 4 cups flour
9) packet of cream cheese (i used philadphia cream cheese)

In a mixer at medium speed, place all the liquid ingredients with the yeast and mix well. Add the dry ingredients one by one until a dough is formed. Cover the dough and let rise until doubled in size.
Take any oven dish you like and grease it well. Break off a small piece of the dough about the size of a regular marble, and an equal piece of the cream cheese. Place the cream cheese in the center of the dough and roll in a ball. Place in the dish. Repeat, placing the stuffed dough next to each other until you fill the dish. Brush them with egg yolk and place in preheated oven at 375 degrees fahrenheit until golden brown . This takes about 30-45 min.
Once you take them out the oven, pour half or all of the sugar mixture on top–depending on how sweet you like it.

How much cream cheese 4oz? 8oz? How much in packet?
It really depends on how cheesy you want it to be. I had a friend who did not use much cream cheese in the middle, but i like to fill it up. So depends on your taste. Let me know if you have any more questions!

what do you mean by the sugar mixture?? it doesnt say to make 1 in the instructions how do you make it?

When you put in the liquid ingredients–i didn’t list each liquid ingredient separately in the instructions. Hope that make sense.

You can but thr honey won’t really br absorbed by the dough. Try it and let me know how you like it. Sugar syrup works better Maa Sha Allah.

Yeah Alhamdulillah I made this today and it is perfect , love it…ljazakillah…btw I used sugar syrup like you said because my husband told me follow the instruction from you..hehehehe to be honest I am very rare eat sweet based by sugar, even my tea or coffee I used honey , that is why I was thinking to use honey in the beginning, but one time eat thi sweet will not harm me :) , I add your FB , insyaAllah next time I made this I will send you the picture through FB, because what is today finished alhamdulillah and forgot to take the picture,FYi , I made full recipe but divided two, one for today one I freeze it like your suggestion….Jazakillah again sister…..

i have a cousin from lebanon that made this once at our house years ago, my dad took over halfway and put bittersweet/dark chocolate in some, peanut butter in others. for the topping my parents wouldn’t let my cousin make the simple syrup lol. my mom and dad hate simple syrup, they prefer honey. my mom said “its called khalayi nahil, that means honeybees, top it with honey!” and my dad agreed cuz it looked like a honeycomb. the chocolate ones were the best in my opinion. my cousin ended up loving the peanut butter ones and he refuses to make cheese ones anymore. now my dad makes it with a hazelnut and dark chocolate mix and/or almond butter for his family for their holidays. and my mom makes it with peanut butter &/or cheese for her family during eid. but they’ve updated the dough to something simpler & quicker, a dough my dad uses for pizzas, strombolis, zeppollis, calzones, garlic knots and a million other things lol.
i’m going to make an apple-pie version. (my dad and mom are in the kitchen making some now, my aunt mentioned wanting some earlier during dinner so he’s making some to take over her house later.. i’m going to steal some dough for my experiment lol)
is this a yafa recipe though? we all assumed it was lebanese cuz he said he learned it from his grandma in lebanon, and my mom never heard of it before. maybe its general middle eastern?
Yeah it’s just general middle eastern recipe. I am not Yaf’ee myself. And in our home, my mother made food from all over Yemen and not particularly from one area. We like to experiment alhamdulliah. Appreciate your comments. I have to try it with the hazelnut butter. Looks like it will taste great.

You know if you use vegetable oil the texture will be a little different. It may turn out crumbly. But you could try it on a small amount and see how it works. Let me know.

I have already made the mutabaqiah and inshaAllah I plan to make the honeycomb on Eid. My friend has also used a few of your recipes for some Yemeni favorites.
