Hi Dr.Lamya,
My husband brought home a bag of frozen chopped molokhia and told me to see what i can do with it. do you by chance have any recipes using this?

Molokhiya
This is the simplest Molokhiya recipe I have ever had, and it is just as delicious. I got this recipe from Um Aboodee–she made it for me when I went over a week ago to break my fast at her place.
You will need:
One bag of frozen minced Molokhiya
3 cloves of garlic finely chopped
1 cube of Maggi chicken buillon
2 tblsp of olive oil (of any other oil you prefe–canola, corn or vegetable)
She lets the frozen Molokhiya defrost first. Then in a pot under medium heat, she sautees the garlic in the oil until it is golden brown (be careful you do not burn it). Then add 2 cups of water and the chicken buillon and let simmer for about 5 minutes. Add the defrosted Molokhiya and let cook for no more than a minute, or else it will lose its elaticity and color.
Serve on a bed of white rice and slices of lemon.

I am very intersted in Yemeni life,culture,people,dress,food and day to day life of Yemenis..When I visited Yemen in 2006,I was taken aback by the warmth and simplicity of the Yemeni people..I have been wishing to go back,but the political situation doesn’t allow for this :(..
I would like to know more about Yemeni cuisine..What is common on a Yemeni table?What would they like for breakfast,lunch,and dinner?how different is Yemeni cuisine to Western cuisine?
I hope you will be able to teach me more about your beautiful culture..

I just wanted to let you know that your site is absolutely marvelous!! I got married in March and moved from Michigan to Chicago and your web site has helped me more than I thought possible! My mom is amazed how I’m cooking all these great meals! She used to force me to sit and watch her cook in the kitchen so I could learn to cook the Yemeni meals but she knew I was never interested. Now she’s stunned as to how I can cook so well, she thinks I still remember her meals LOL maskeena!! I love your site keep up the good work! I was looking through your site and I found the fish curry recipe you posted. I am from Bangladesh and the recipe you posted surprised me a lot because we never ever put cinnamon (part of garam masala) in fish, unless it is a firm textured fish like salmon, tuna, trout or hilsa. In a typical fish curry we never ever put any kinds of garam masala( cinnamon, cardamon, clove, black pepper, bay leaf, star anise, caraway seeds, nutmeg, mace or allspice), putting garam masala in fish is almost considered a taboo in our culture and they are reserved for meats. When we do plain fish curry without any tomatoes we put vegetables that are soft after being cooked like okra, zucchini or eggplant, but it is very rare to cook fish with potato, but meat and potato curry is very common and popular amongst Bangladeshis. When we do plain curry, even lots of our people, and mostly kids find it very fish, and to combat the fishy smell we put couple of lime leaves in the curry. Please feel free to put tomatoes in your fish curry, its a very common practice in our culture, and we put cilantro to finish it off.

We usually don’t make this. But it is a well known Somali Dish. The recipe i follow for it is this: http://xawaash.com/?p=1792. If you would like it with a little sauce, add some tomato paste and a little water. Let me know if this is what you were looking for.

I would like to know how I can make the bread recipes gluten free as unfortunatly I am allergic to wheat. Would you recommend 1:1 ratio with gluten free flour?
