I dedicate this blog to my dear mother Hasna Mohammad Azhar Ramadhan who encouraged my learning in her kitchen at a very young age. I remember, much to her horror, the times when I would drag a chair to the stove and peer curiously into her bubbling pots . I remember, throwing a fit if she so much as put something in the pot without showing it to me first. Yes, all my tantrums were in the kitchen. I learned by smell first and later on by sight–today if it smells like hers then I can give it the two-thumbs up.
Every recipe on this blog, she has either taught me or has been the cause for its inspiration. I still only believe it is good if it tastes EXACTLY like hers–she is my gauge when it comes to cooking. I still ask myself, “What would my mother add to this?” Or “What would my mother do with this piece of meat?” She has taught me more than she will ever know.
May Allah bless her abundantly and grant her the highest level in Jannah. Ameen. Uma I love you and miss you, and dream of the day when I come to visit you in Yemen Insha Allah.

Salam:) Greetings from Denmark. What a great blog..I just googled “aseed” for fun and didnt expect to find a blog about yemeni food…Finally a place where people understand the words aseed, hulba, katlees etc.
Your story reminds me of my mothers story, who also learned to cook the way you did. My sisters and brothers have mashallah picked up my mothers cooking skills but unfortunately I was more interested in eating than cooking:)
Buuut now I think its time to try some of your recipes, so that I can surprise the Fam.
Do you have a “lahooh” recipe? I once tried to follow my mothers instructions, but its difficult to get it right when you dont know the exact amount to put in and you dont “cook with love” as my dad would say:)

I am so glad to have found your website. My husband is from Yemen and while I have managed to piece together my own versions of foods I’ve had while visiting in Yemen, it is nice to see them in print and see what that little something mine was missing is! I love cooking salta, kebda, shashooka, fuul and kabsa for him. It is mostly what we eat now in our home all the time as he won’t eat american food. Even when I make a meatloaf, he’ll try to turn it into salta…lol

Do you have the recipe for Roast Lamb (haneez) with rice?
There is a well known Yemeni Restaurant in NYC called Yemen Cafe and its their signature dish. Slow roasted lamb with rice and a kind of vegetable puree.
What kind of spices do they use in the lamb?
Wa Alaikum Assalaam Br. Mehdi–
Haneed has the usual ground spice mixture of cumin, coriander, cinnamon, cardamon, and black pepper.
Usually Handeed doesn’t have a puree to it–but it is roasted as you mentioned and is served roasted on rice. The stew is called Aqda and i have a recipe for it on my blog. Let me know if you can’t find it.
I plan on making Haneed soon and insha Alalh will post.

I am so happy I found your website! I am from Yemen (well, my father is) and spent some of my childhood in Sanaa and Aden. And while I loved everything about Aden what I miss most is the food. I have been looking for some of the recipes (eg. Attar) in here for ages but usually couldn’t because I had the spelling wrong. And to finally find them so amazingly collected, I could just kiss you right now! :) Thank you.

One yemeni dish I struggle with is akda. If I ever buy some from a yemeni restaurant, I usually buy chicken akda and it is so amazing because its quite thick with all the veg in it (unlike sanoona being slighly watery/curry like). Just wondering if you have a recipe for this please let me know. This website is fab by the way xx

I am married to a yemeni and he loves his food mashaAllah, and I have tried to learn some recipes or tried to copy your recipes but I always seem to mess it up or just not do it right. I never really cooked before I met my husband and still (3 years on) struggle to cook. Have you got any tips or anything that helped you when you learned to cook that could help me?

Start with lots of dua.
You have the motivation and desire to learn that’s a plus always . Follow the recipes you acquire carefully — make no additions is what I learned. Also, while learning a new recipe from someone if they don’t measure measure while they are teaching me , take notes and practice right away ( the following day if possible). And above all if you don’t get it right the first time , try and try again.
Talk to your husband and tell him to be patient , to support and encourage you in your endeavor to learn and please his palette In Sha Allah . That always helps as well .

When I was in Saudi Arabia I used to eat a Yemeni dish we used to call “Burma”, which consisted of mutton pieces cooked on a slow fire for a very long time and served with rice. It was delicious. I have now left Saudi and back home.Please tell me what the recipe is as my children loved it and keep asking for it.
