Spinach

This is a quick and cheap dish. You can either eat it on its own, with bread, or on a bed of rice . It is one of my favorites.
You will need (enough for three people):
1) A box of frozen spinach THAWED
2) 1 small onion finely chopped
3) 1 green chillie or jalapeno finely chopped (optional)
4) 2 -3 cloves of garlic minced
5) 1 big tomato finely chopped
6) 2 tblsp of tomato paste
7) 2 tblsp of olive oil
8) salt to taste
9) lemon wedges
In a small pot, under medium heat, heat the olive oil and add the onion and green chillie. Let them brown a little and then add the garlic and sautee until golden brown. Add the tomatoes and salt and when softened add the tomato paste. Add about 1/cup of water and let simmer for a thick sauce.
Then squeeze the water out of the thawed spinach and add to the sauce. Add water–as desired. I like it nice and thick so i usually add about another 1/2 cup. Let simmer until desired thickness, for about 4-5 minutes more and serve hot with lemon wedges.
For a quick lunch or dinner, serve this on a bed ofwhite rice with either some fried fish or baked chicken. It makes for a great meal.
