Simple Baked Chicken

This is something that you can whip up real fast when you are in the mood for something light, and don’t want to spend much time cooking. It’s an emergency food for me, without sacrificing taste.
You will need:
1) 1 Cornish hen quarter with skin on [or any regular whole chicken will do].
2) 2 medium sized potatoes peeled, and quartered lengthwise [into wedges]
3) 3 tbslp of extra Virgin Olive Oil
4) 1/2 tsp of ground cinnamon
5) 1/4 fresh ground pepper
6) salt to taste
7) ground chilly power or pepper flakes [ or chilly paste] OPTIONAL but gives it a nice kick.
8) 1 small red or yellow onion thinly sliced [I used red]
Preheat oven at 400 degrees Fahrenheit. In a Pyrex place the chicken, onions, and potatoes. Add the rest of the ingredient. Mix well. Add 1 cup of water, from the side of the pan don’t disturb the spices that have clung to the chicken, onion and potatoes. Bake uncovered for 45 minutes until golden brown. There will be a wonderful broth at the bottom of the pan.
Serve with bread. Enjoy!

How are you doing? I’m really sorry that I didn’t get to see you before you left but I was in Ethiopia during the summer, and you were gone by the time I got back. I was quite disappointed to hear that you had left, but I hope you’re having a nice time where you are (was it Alabama?) inshallah.
About the chicken, I wanted to know if skinless chicken breast or legs would work as substitutes, or if the recipe would taste better as it is.

So nice to hear from you. Sorry we did not get to see each other before I left. Yes i moved to Alabama, and alhamdullilah am doing great. I hope you had a great time in Ethiopia. It is one of the places that i miss the most of all the places i have been to. Keep in touch online insha Allah and we still have halaqas, i do them over the phone. The past ones are on You Tube. As for your question about the chicken, the skinless will work of course but it will not be as tasty as with skin and bone in. So, in other words, it would taste better if it is as is. Let me know if you have questions yet.

So if i wanted to use just chicken legs rather than a whole chicken, how many drumsticks do you think would work with the reciepe?
You may use any parts of the chicken. If you are using drumsticks, about 5 of them will work with this recipe Insha Allah Sister Inari.
We saw this on FB and my little sister wanted to try it asap. Instead of using the oven for this one I made it in a skillet and it turned out very nicely.
