Date Cake [كيكة التمر]

No Muslim house is ever empty of dates, and especially leftover dates from the past ramadhan.
You will need:
1) 400g of dates (2 cups and a quarter of pitted dates)
2)150g butter (this turns out to be about one stick and a quarter)
3)150 ml water (3/4 of a cup)
4) a can of sweetened condensed milk
5) 150g flour(1 cup of flour)
6) 1tsp baking soda
7) a pinch of salt

In a pot under medium heat place the dates, water, butter and sweetened condensed milk and let cook. Keep stirring lest it burn or stick to the bottom of the pot. Once the butter is all melted, and the dates start to melt into the mixture–this should take about 6 minutes or so–turn it off and let cool COMPLETELY.
Mix the flour, salt and baking soda. With a hand mixer blend the liquid mixture with the dry mixture until WELL BLENDED.
Place in a well greased bundt pan and place in oven at 350 degrees for 45 minutes, or until a toothpick comes out clean.

it looks great, do the dates have to be chopped? do they really melt when heated? I live in egypt and have dates but i do not have much experience with them. :-)
Yes, they do melt when you cook them. Try it and you will find out Insha Allah.

I made the cake and loved it and so did my husband. Thanks so much for the recipe its simple and tastes so good.I like that Yemen food is simple but so delicious :-) i look forward to more recipes. do you know of the kenafe with the filling? it has an orange top and is filled with some kind of cheese maybe nabulsi? I am always looking for that recipe lol

my mom & grandpa LOVE dates! they eat them like every morning with coffee, with the rest of my family (and they use to, very unsuccessfully, try and convince me to eat them. they’re too sweet for me, i can only have one. but they convince everyone else, 7 dates with coffee every morning. it’s a shock my family is not fat lol.)
I’m going to make this cake for them. they’ll be excited i bet!
since dates are already sweet, is the sweetened condensed milk necessary or can i just use condensed milk?
(using the red box, really big, jumbo sized medjool dates.. super super sweet)
You can try and use the condensed milk if you like, but i am guessing it will make it harder and will change the taste. You will see what i mean when you try it. With some strong bitter coffee the sweetness is well balanced.
What flour do u use?
I use all purpose flour. I never use self rising flour in my recipes, and if i do i will always make a note of it.

No eggs in this recipe. It tastes great too Audra. Try it. The sisters at the Masjed really liked it a lot, and i stay away from making it at home because I can eat the whole cake ALONE! LOL!

salaam Dr lamya, I made your date cake and it was delish! my husband really loved it! ( am ziads wife who contacts you) as I told you before gibraltarians don’t know anything about yemen or Yemeni food, and when I make salta, shafoot, or many other Yemeni dishes they are super impressed and best of all is that my family and friends all love it! I shall always be thankful to you for putting up this great blog! and I pray that peace comes to yemen . am very saddened to see what is happening to your beautiful country. May god bring peace.
